Line two baking trays with baking paper. ##Almonds## in the universal chopper very finely grind. Sieve 400 g icing sugar into a bowl. Add almonds, ##protein## and flavour and mix everything with the whisk of the hand mixer.
Form approx. 60 balls from the mass with moistened hands. Turn half of the balls in sugar crystals. Spread them on the trays. Press the top of the balls together slightly with three fingers. Keep Amaretti in a cool place at least
Leave to rest for 5 hours.
Preheat oven (electric cooker: 175 °C/recirculating air: 150 °C/gas: level 2). Bake in the hot oven for 18-20 minutes one after the other. Leave to cool on the trays.
Carefully loosen and dust the Amaretti without sugar with 1 tbsp. icing sugar.
