Almond tart with peach salad

Ingredients

  • some Butter
  • 80 g cold butter
  • 100 g soft butter
  • some Flour
  • 150 g Flour
  • 1 TABLESPOON Flour
  • 1 Organic Orange
  • 80 g Sugar
  • 100 g Sugar
  • 7-10 Tbsp Salt
  • 1 Egg yolk (Gr. M)
  • 2 Eggs (Gr. M)
  • 100 g ground almonds (with skin)
  • 1/2 vial Bitter Almond Oil
  • 1 Lime
  • 1 TABLESPOON Honey
  • 2 Peaches or nectarines
  • 150 g Strawberries
  • 1 stem(s) Mint
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Cling film
  • baking paper
  • 7-10 Tbsp Dried peas

Directions

    Grease a springform pan (18 cm Ø) and dust with flour. Wash the orange, rub half of the peel off. Mix 150 g flour, 80 g sugar, 1 pinch of salt, half the shell, egg yolk, 1-2 tbsp cold water and 80 g butter in pieces, first with the dough hooks of the mixer, then quickly knead with your hands to a smooth dough. Roll out round (approx. 24 cm Ø) on a floured work surface. Line a mould with it and pull up the rim. Cover with foil and chill for approx. 30 minutes.

    Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Prick the dough with a fork, cover with baking paper, add peas. Pre-bake in the oven for about 10 minutes. Remove paper together with peas. Continue baking for about 5 minutes.

    For the filling, whisk 100 g butter, 100 g sugar and whole eggs with the whisks of the mixer until creamy. Stir in the rest of the orange peel, almonds, 1 tablespoon flour and almond oil. Pour onto the dough and bake at the same temperature for approx. 25 minutes. Take out and let cool down.

    For the salad squeeze lime. Mix juice and honey. Wash peaches and strawberries. Stone and dice peaches. Clean the strawberries, chop them smaller. If necessary, wash mint and chop finely. Mix fruits, sauce and mint. Dust the cake with icing sugar, serve with salad. Serve with double cream.
