Advocaat waffles with cherry compote

Ingredients

  • 1 glass (720 ml) Morello cherries
  • 100 ml Red wine
  • 2 heaped Tsp cornstarch
  • 1 TEASPOON ground pimento
  • 3 TABLESPOONS Honey
  • 200 g Butter or margarine
  • 100 g Cornstarch
  • 150 g Sugar
  • 2 packages Vanillin sugar
  • 3 Eggs (size M)
  • 150 ml Egg liqueur
  • 150 g Flour
  • 7-10 Tbsp Oil
  • 200 g Whipped cream and advocaat

    For the compote, drain the cherries and collect the juice. Bring 200 ml cherry juice and red wine to the boil. Mix starch and pimento with 5 tablespoons of cherry juice, add while stirring and bring to the boil. Remove from heat, add drained cherries and honey. For the waffles, beat the soft fat, cornflour, sugar and vanillin sugar with the whisks of a hand mixer until foamy.

    Stir in eggs and advocaat one after the other. Fold in flour with a whisk. Preheat waffle iron, brush with oil and bake the waffles one after the other. Serve with whipped cream and advocaat as desired. Results in approx. 10 pieces
